Pumpkin Raisin Oatmeal Cookies

Pumpkin Raisin Oatmeal Cookies
(makes aprx. 48 small cookies)

Ingredients
1 stick of butter
1 cup white sugar
1 Tbs molasses
1 cup fresh pumpkin (if you're using canned pumpkin that's already spiced halve the dry spices)
1 egg
1 tsp vanilla
2 cups flour
1 1/2 cups rolled oats
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp clove
2 tsp baking soda
1 cup raisins

Pre-heat oven to 350°. Cream together butter, sugar, molasses, vanilla, and egg. Add pumpkin and mix together. Add dry ingredients: flour, oats, spices, baking soda, and raisins. Mix together.

I use parchment paper on my cookie sheet. If you don't use parchment paper then lightly butter/oil however you would normally prepare a sheet for cooking cookies.

Using two tablespoons, scoop the dough with one and the other to scrape the dough off on to the cookie sheet. Depending on the size of your cookie sheet you can get up to 12 per sheet. Bake for 10 - 12 minutes depending on your oven.
